Kheer Recipe: A Deliciously Sweet and Creamy Rice Pudding Perfect for Any Occasion

Ingredients:

1 cup long grain rice

4 cups water

6 cups whole milk

1 cup sugar (or to taste)

1/2 cup slivered almonds, toasted

1/2 cup raisins

1 tsp ground cardamom

pinch of saffron threads (optional)

1 tsp rose water (optional)

Instructions:

Rinse the rice and add it to a large saucepan with the water. Bring to a boil, then reduce the heat to low and simmer, covered, until the rice is tender and the water has been absorbed, about 20-25 minutes.

Add the milk to the saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer, stirring frequently, until the milk has thickened and the rice is fully cooked, about 40-50 minutes.

Add the sugar and stir until it has dissolved. Stir in the toasted almonds, raisins, and ground cardamom.

If using, add the saffron threads to a small bowl and crush them with the back of a spoon. Add a few tablespoons of hot milk to the bowl and let the saffron steep for a few minutes. Stir the saffron milk back into the kheer.
