Kheer Recipe: A Deliciously Sweet and Creamy Rice Pudding Perfect for Any Occasion
Kheer is a traditional Indian dessert made with rice, milk, and sweeteners such as sugar or jaggery. It is often flavored with nuts, raisins, and spices such as cardamom, saffron, and rose water. Here is a recipe for making kheer:
Ingredients:
1 cup long grain rice
4 cups water
6 cups whole milk
1 cup sugar (or to taste)
1/2 cup slivered almonds, toasted
1/2 cup raisins
1 tsp ground cardamom
pinch of saffron threads (optional)
1 tsp rose water (optional)
Instructions:
Rinse the rice and add it to a large saucepan with the
water. Bring to a boil, then reduce the heat to low and simmer, covered, until
the rice is tender and the water has been absorbed, about 20-25 minutes.
Add the milk to the saucepan and bring to a boil over medium
heat. Reduce the heat to low and simmer, stirring frequently, until the milk
has thickened and the rice is fully cooked, about 40-50 minutes.
Add the sugar and stir until it has dissolved. Stir in the
toasted almonds, raisins, and ground cardamom.
If using, add the saffron threads to a small bowl and crush
them with the back of a spoon. Add a few tablespoons of hot milk to the bowl
and let the saffron steep for a few minutes. Stir the saffron milk back into
the kheer.
If using, add the rose water and stir to combine.
Serve the kheer warm or chilled, garnished with additional
nuts and raisins if desired.
